In the midst of a myriad of doughnut joints, bakeries, and cupcake kitchens, it is a kolache shop that is
gaining quite a following in Cypress. Tucked into a strip shopping center at Spring Cypress and Louetta,
Koala Kolache brings the traditionally sweet Czech pastries together with savory offerings of Klobasnek,
or, as they are most commonly known, kolaches. While most bakery shops offer the typical sausage and
cheese kolache, Koala Kolache owner, Vatsana Souvannavong, strives to have her customers “Leave
Happier,” with an astounding assortment of gourmet offerings.
Constantly changing their menu, one will find a delightful array of kolaches. Artichokes and Spinach,
Gyro, Boudin, Bulgogi and Kimchee, Egg whites and Leeks, Buffalo Chicken, Grilled cheese, Chicken Feta
with Spinach, Sausage and gravy, and even Mac and cheese Kolaches are temptingly displayed in the
cases. “People come here expecting to find doughnuts. I am not a doughnut shop. I will leave that to
Shipley’s and places like that. Depending on how many orders we have, we make from 500 to 1,000
kolaches a day! It’s worth waking up at 2 in the morning if you guys like our food, because we are really
passionate about what we do!” shares the owner.
For Vatsana, product quality is of the utmost importance. “That’s why I try everything; I have to make
sure that the taste and consistency is the best I can offer. Whenever we can, we use organic ingredients.
We support community businesses for fruits and vegetables and buy cage-free eggs. I want to continue
to elevate my customers’ experience when they walk into my shop,” she explains earnestly. Koala
Kolache is tastefully decorated: pristine and classy with white subway tile, sparkling glass display cases, a
nostalgic ice cream counter and a coffee bar. Then, there’s Vatsana. Koala Kolache’s customers are
quick to compliment the woman behind the concept, describing her as “passionate, delightfully friendly,
upbeat, amazingly sweet and happy!”
Born in Laos, Vatsana came to Houston with her mother, at age 4. On her own at 14, after her mother
passed away, Vatsana took off for L.A., where she worked in the fashion industry, and started several
business enterprises. Returning to Houston, this high energy, engaging young entrepreneur and single
parent continues to entice her customers with her own distinctive creations of kolaches, cronuts, and
cinnamon rolls. “We make delicious original, raspberry and Nutella cinnamon rolls,” says Souvannavong
confidently. “They’re the new best thing!”

KOALA KOLACHE LAUNCHES CHEF SERIES WITH CHEF DANNY TRACE
Chef Danny Trace Creates “OK Kolache” for the Summer Chef Series

Koala Kolache will launch their first-ever Chef Series on May 4. The series will run annually, with a new
chef collaboration every season. Each chef will work with owner, Vatsana Souvannavong, to create his or
her own gourmet kolache that will be sold exclusively at Koala Kolache. “I am so excited and honored to
launch the Chef Series with one of my favorite chefs in Houston!” said Souvannavong.
The Summer Chef Series features Chef Danny Trace, from Potente, Osso & Kristalla and Monarch
Hospitality. The kolache is inspired by the Giant Meatball dish at Osso & Kristalla. “One of my favorite
items on the Osso menu is our Giant Texas Meatball and Homemade Rigatoni,” said Trace. “When
Vatsana asked me to participate in the Chef Series, I knew I had to incorporate it.”
The gourmet kolache is prepared with Koala Kolache’s famous dough, along with local Texas beef,
marinara, parmesan, red pepper flakes, olive oil, green onion, basil, salt and pepper. “It is important to
us that we source ingredients locally so our customers have the quality they deserve and we are
supporting other local businesses,” said owner, Souvannavong.
The Summer Chef Series will run from May 4 to July 6. 50% of the proceeds from every OK Kolache sold
will benefit Trace’s charity of choice, The Astros Foundation.
